Why it Works: It’s filling, but easy on the stomach. When I have an evening workout or race, I need more substantial food than the bars, gels, and nut butter snacks on which I usually subsist between workouts.
I have always been the kind of person who can't sit still and who, for better or for worse, likes to do things a bit differently. In fact, when O magazine asked me to describe myself in one word, that is exactly what I said: unconventional. I would say that opting to race in Nevis exemplifies just that. Instead of racing in Miami as I have the past two years, I decided to try something new.

In just a few days Laurel will be traveling to the Caribbean Island of Nevis to race in the TriStar 111 series event. TriStar holds many events in Europe and the 111 stands for 1k swim-100k bike-10k run. You may be wondering why Laurel would chose this race over some of the others that are happening the same weekend. Well, for one (as you can see in the pics below), Nevis is a beautiful, WARM, island...AND...Wassner's have a history of winning there. Bec won an ITU race there a few years ago and the race director Winston welcomed Laurel back to the island. Also, with the Ironman in NY on the horizon, Laurel wanted to get a chance to try out a long bike ride:
