Oats of the Week: Dried Figs and Concord Grapes

The Mix:  Rolled oats with dried figs, concord grapes, and walnuts

The Story:  SJ and his partners from Team ATP Light finished third in the masters division at this weekend's USARA Adventure Racing Nationals (10th overall). This trip to the podium required almost 30 straight hours of paddling, mountain biking, and trekking in the western Catskills. They also braved brutal weather conditions: temperatures in the low 20's, sparatic downpours, hail storms, and even an early season snow storm. Since SJ was understandably not up to making our usual steel-cut Sunday oats, I microwaved some oats topped with a few pantry staples and some fresh concord grapes from a local orchard. 

The Workout:  Sorting through the race swag bag while firing up the DVR for a few episodes of Homeland.

The Instructions:  For each person: Stir together Β½ cup old-fashioned oats and 1 cup water in a bowl. Microwave for 2 minutes. Leave the oats in the microwave for 1 minute to finish cooking. While oats cook, quarter 3 dried figs. Top cooked oats with the figs, a handful of walnuts, and about 10 of concord grapes. Sprinkle with sea salt.
