Refueling After Sandy

After eating peanut butter and rice cakes for a few days in the aftermath of Sandy, I was feeling famished, stressed and lacking energy. Oh and yes, in a bad mood too! Things turned right around when I met Bec in upstate's Rosendale, NY at The Big Cheese for this tasty lunch full of Athlete Food favorites. This Mediterranean spread was my first bite of savory food in a few days and for this storm refugee, it couldn't couldn't have been better!

The Menu:

-roasted beet salad with parsley

-Fresh greens with light dressing

-homemade hummus

-olives

-portobello capped with labne, sundried tomates and chard

-chick pea, carrot, radish and celery chopped salad

-crispy Turkish bread

...and for dessert:  a long walk on the Rail Trail

--Laurel
