Athlete Food: purely elizabeth Pancakes topped with Peaches and Mint

If you haven't seen purely elizabeth products in the grocery store yet, now's the time to look. These all-natural, gluten-free, and all-around delicious granolas and baking mixes are now in Whole Foods and Wegmans nationally. 

Laurel and I first fell in love with elizabeth's granola when we were roadtripping to Buffalo for USA Triathlon Nationals last summer. We loved it so much, we had to ration the bag of granola we brought - only allowing handfuls when we passed exits on the New York State Thruway. If you haven't driven on this road, exits are at least 15 agonizing miles apart. 

Anyway, now thanks to the team at purely elizabeth, I have a pantry full of granola and chocolate chip cookie and pancake mix. Purely elizabeth even sent a big box of granola to feed the racers at last week's Shawanathon

Amy isn't eating the granola yet (she only has two little teeth), but she was definitely curious about the pancakes we made for breakfast over the weekend.

Purely Elizabeth Pancakes topped with Peaches and Mint

purely elizabeth pancake mix

4 peaches, diced (leave skin on)

2 tablespoons fresh mint leaves, chopped

In a small bowl, toss peaches with the fresh mint. Set aside while mixing and cooking the pancakes. To make the pancakes, follow the directions on the purely elizabeth packaging, using maple syrup as a sweetener (we like Crown Maple syrup). Serve the pancakes topped with the peaches, plain greek yogurt and a drizzle of maple syrup.
