Our recent trip to Israel for the Israman Triathlon (read about that here), had us thinking, how can we turn the amazing Israeli salads we found all over the place into a full meal instead of a side dish?

As we found out, it's this easy. 

Upgrade this classic Israeli side salad to a complete, healthy meal. Ispired by the Israman Triathlon.

ATHLETE FOOD ISRAELI SALAD

serves 1-2 

3 mini cucumbers, diced

4 Roma tomatoes, diced

1 cups cooked quinoa

1/2 cup crumbed feta cheese

1 tablespoon capers

2 teaspoons toasted sesame seeds

parsly, chopped and fresh

juice from half of a lemon

olive oil

salt & pepper 

Combine all ingredients in a large bowl and eat.
