#meatlessmonday Grains & Greens bowl. Kale, roasted sweet potatoes & red onions, rice, lentils, Greek yogurt vinaigrette with tarragon, and our very own, homegrown hot pepper. Cold dinner for a hot night.
How to dessert. Today Amy wanted to bake so we made a strawberry upside down cake and piled on all the fresh berries, whipped cream, and mint. We used a cupcake recipe Amy found @delish, used half of the batter to make cupcakes and the rest for this.

A week after finishing 5th at Ironman Switzerland, Laurel jumped in a fun, local sprint race and won it! Stay tuned for her Race Report, but in the meantime, we're toasting to her victory with these four fresh fruit and peanut butter topped raisin breads.
