Brightening up Winter meals: Citrus Vinaigrette

Brrr! It's the first truly cold day her in New York. But in my commitment to healthy eating, I'm going to sneak in a salad or two between cups of hot chocolate.

All summer, we're happy with just a squeeze of lemon and a drizzle of olive oil on most of our salads. But in winter, we need a little something more to brighten up those less than fresh-picked greens and vegetables. This Citrus Vinaigrette is how we do that.

Citrus Vinaigrette

In a small jar, combine: 

4 tablespoons lemon juice

3 tablespoons orange juice

2 tablespoons lime juice

2 tablespoons champagne vinegar

1 teaspoon dijon mustard

1 teaspoon honey 

1/4 teaspoon Caribbean Green Seasoning 

1/4 teaspoon dried thyme

Seal the jar tightly and shake vigorously until all ingredients are combined, including the mustard and the honey. 

Add 5 tablespoons olive oil.

Shake again to incorporate oil.
