Go Ahead, Take a Short Cut: Athlete Food Green Seasoning Mix

If there's one thing that's guaranteed to speed up your dinner prep AND make your meal more favorable, this seasoning mix is it. After picking up this secret cooking weapon from my Guyanese nanny, Mamzie, last fall, now I rarely make a savory dish without reaching for my jar of ground garlic, onions, scallions, thyme, and (if you like) hot peppers. It's led me to many "dinner on the table" PR's. 

Grinding a batch takes about 20 minutes upfront and saves multiples of that down the road. Make one batch and you'll realize why many Carribean homes alway have a jar of this in the refrigerator. --Bec 

Athlete Food Green Seasoning 

2 large heads of garlic, cloves separated and peeled

2 large onions

2 bunches of scallions

2 tablespoons dried or fresh thyme OR a big bunch of cilantro

2 tablespoons olive oil

1 hot pepper

Place ingredients in a food processor and grind until all the ingredients are finely chopped.
