Oats of the Week: Strawberries and Mint


The Mix: old-fashioned oats, strawberries, and mint


The Story:  Steamy weather has arrived. But since the lakes and rivers are chilly, hot cereal is still part of the breakfast plan before and after our open water swim practices. To put a summer spin on the oats, I added strawberries, and mint leaves from the garden. The sweet in-season berries eliminate the need for maple syrup or honey.


The Workout: 3k lake swim - 200 warm up, 3x1 lap of the lake at race effort, 200 cool down


The Instructions: Stir together ½ cup old-fashioned oats and 1 cup water in a bowl. Microwave for 2 minutes. Let the oats sit in the microwave for 1 minute to finish cooking. Stir in 2 chopped mint leaves. Top with strawberries.
