Stacked Field Tomato Salad

The start lists for this weekend’s 70.3 World Championships was just published and the field is stacked! I’m still pinching myself that I’m even on the list because two of my three qualifying races did not go well at all. But things somehow worked out and I’ve been given the opportunity to race the world’s best this weekend. It’s an unexpected, but very exciting development.

To prep for the race this weekend, I decided to extend my summer stay in New Paltz into September. Among other things, this means that I get to make the most of late summer local veggies. I’ve been making a simple salad of chopped tomatoes, fresh mozzarella, basil, with a little balsamic as an after workout snack. Today I decided to stack it up (like the race this weekend) before diving in. --Bec
