Fast Dinner: Burrito Bake

Here's a super fast dinner idea that makes it look like you spent all day in the kitchen and not all day riding your bike. The key to speed here is making the rice and the Bison Kale Mix ahead of time…and watching this video a few times. 


Athlete Food Burrito Bake

Filling:

Cooked Brown Rice

Bison Kale Mix

Black Beans

Lime Zest and Juice

Frozen Corn

Salsa or fresh tomatoes

Toppings:

sliced purple cabbage

diced green bell peppers

hot sauce (optional)

Layer the above ingredients. Cook in oven preheated to 350 until warmed through.

Top with cabbage and green peppers and serve with hot sauce.
