The Athlete Food Winter Power Bowl with Green Goddess Dressing

One of our favorite training foods is a super easy-to-assemble, no-cook Power Bowl. We came up with this idea during the height of summer when turning on the oven to cook after a long, hot training day was just not an option. 

But even in these frozen days of winter (when turning on the oven is a welcomed thought), we are finding ourselves craving the quick protein and veggie boost that a Power Bowl delivers.

In order to make this typically summer staple a warming winter classic, we added these new (and very flavorful) toppings which can be found at Whole Foods and are also paleo.

Winter Power Bowl with Green Goddess Dressing

In a large bowl, arrange the following ingredients:

2 large handfuls of baby kale

fennel slices

red pepper slices

cucumber slices

1 filet of smoked salmon

a few cilantro leaves

Top with:
