Easy Pineapple Fried Rice


Easy Pineapple Fried Rice

1 teaspoon coconut oil* 

1/4 yellow onion, diced

1 cup frozen peas (or frozen vegetable medley)**

1 cup diced pineapple (if using canned pineapple, drain it first)

2 cups brown rice, cooked

1 teaspoon Five Spice seasoning

1 tablespoon Tamari (or soy sauce if you aren’t gluten-free)

Heat a large frying pan on medium heat. Saute onions in oil until they start to soften, about 5 minutes. Once the onions start to turn brown around the edges, add vegetables and pineapple.

Cook and stir until the vegetables thaw, about 3 minutes. 

Sprinkle Five Spice seasoning over the vegetables and pineapple and stir to make sure it is evenly distributed.  

Add rice, mix it through, then add tamari.

Stir to combine and serve!

*if you don’t have coconut oil, you can use any neutral oil. Also, if you have a good nonstick pan, you can use less oil. We have spray coconut oil and usually just add a couple of sprays to the pan and that does the trick. 


**fresh would be better, of course, but this recipe is all about speed and ease!
