Pears and Cheddar Mini Cheese Plate

Saturday was one of those perfect spring days. Flowers were out everywhere, it was warm enough to wear shorts biking, but cool enough not to over heat. There couldn’t have been a better day for riding up to the Mohonk Mountain House, down the mountain to High Falls and back. For those not familiar with this New Paltz bike ride, it is one of the steeper climbs around and one I had not attempted to ride it since last year. I don't know if it was the weather or if I was just happy to be riding up this hill again, but it somehow felt almost effortless. 

When we got back from the ride, it was too nice out to go inside, so we brought the team (Amy and Maya) and our post-ride snacks outside.  I broke out the pears and cheddar and SJ made us an Ultragen smoothie.

Crispy pears topped with cheddar cheese is one of my favorite snacks. It’s a gluten free alternative for cheese and crackers, with the pear slice standing in for the cracker. We used a local New York cheese and a little bit of Cabot Clothbound cheddar we had left from a kale salad I made the night before. Maya (the dog) approved of both cheese varieties.
