Introducing the Just One Bite ice cream sandwich. It's the perfectly sized afternoon snack for mini athletes and those of us big athletes who want "just one bite" of dessert after dinner.
Cookies - You can make these cookies from scratch or buy some. We used ginny minis from ginnybakes. They are just the right size, are gluten-free, and a good alternative to turning on the stove in this summer heat.
Frozen Yogurt/Ice Cream - We used Haagan-Daz Vanilla Frozen Yogurt to lighten up our chipwiches, but your favorite Ben & Jerry's, Jane's, or Jeni's flavor would also work. Or you could make your own turmeric frozen yogurt.
What you need:
- mini cookies
- frozen yogurt or ice cream
- roasted almonds, chopped
Using a melon baller to make small a scoop of ice cream. Place it on top of one of the cookies, top it with a second cookie, and gently squeeze. Roll in chopped almonds. Place in the freezer for a few minutes before serving.
