Brighten Up Winter Power Bowl

Just looking at colorful bowl will brighten up any winter day. It's also packed with nutrients, has a healthy dose of omega-3's, and is bursting with flavor. We consider that a winning combination. 


WINTER POWER BOWL

Here's What You Need:

Cooked Brown Rice or Quinoa *

Shredded Lacinato Kale tossed with lemon juice and sea salt  

 Roasted Butternut Squash *

Slow-roasted tomatoes *

Smoked Mackerel

Sliced Zucchini (or another vegetable you have on hand)

Beet Hummus (store-bought is ok or try Shalane Flanagan's recipe from Run Fast, Eat Slow)

Capers

Sesame Seeds

* can be made ahead

How To:

Start with the rice and then layer or arrange remaining ingredients on top.
