Post-Marathon Snack Attack: Gluten Free and Nut Free Cold Sesame Noodles with Spicy Tofu
Are you running the New York City Marathon this weekend? Or do you have a long run or training ride which will leave you starving and craving Chinese food? That’s my default craving on long training sessions! Make these Cold Sesame Noodles ahead of time so you can be ready to chow down when you get home from the race or run. To me these are the ultimate comfort food. They are typically made with peanut butter but we substituted sunflower butter and added a super seeded avocado (which is an avocado sliced in half and smothered in seeds. Also, you can add some extra protein with quinoa noodles and tofu, for an extra nutritional boost. The tofu is cubed and mixed with a little sweet chili sauce and some hot pepper flakes for some kick. Also add more crushed red pepper or a bit of chili oil on top if you like things spicy. Sliced cucumber is the classic, crunchy addition to this dish and thinly sliced carrots also work. You can make the noodles and tofu ahead of time and mix up this sauce in a mason jar. Put the following in a mason jar and shake:
2 Tablespoons Tamari
2 Tablespoons rice vinegar
1 overflowing tablespoon sunflower butter
1 teaspoon sweet chili sauce
a few drops of sesame oil
