Healthy Snack: Eggplant Yogurt Tahini Dip

As a professional triathlete, my job is to travel the world and race. Sometimes I race in familiar places like in my hometown of New York City, but often races are located in parts of the world I never dreamed I’d experience. Take for example, Langkawi, Malaysia, where I raced an Ironman last November and where I first tried this eggplant and yogurt based dip at a Syrian restaurant. I wrote down the flavors and ingredients in my travel journal (and off course took a few photos!).  When I got home I recreated a healthy, tasty version and whipped it up in my new Vitamix.

Yes...I just got the Vitamix Venturist V1200, and I don’t know what I did without it! Since the other part of my job as a professional athlete is to eat the right amount of healthy meals to fuel my body to be its best, I really have to be on top of preparing meals for the week. I know that if I devote a little time to meal prep then I won’t fall into the trap of coming home from a swim workout and eating everything in sight!

Since I got the Vitamix, I have been making a few different dips ahead of time. I pack in as many nutritious ingredients (like garlic roasted eggplant and greek yogurt for this one) as I can and let the Vitamix work it’s magic to make a creamy dip. Then, when I’m hungry for dinner after a workout, I can just go in the fridge, grab my container of dip and use it to flavor a power bowl of rice and veggies, or, in the case of this eggplant yogurt dip, make it the centerpiece of a quick mezze platter. I was able to put this spread together for my running partner after a workout in a matter of minutes and we had the perfect post run meal.
