Recipe: Comfort Food - Pastitsio Stuffed Shells
Looking for some good comfort food? Check out this twist on Stuffed Shells. It’s made in a pastitsio style - what is that? Pastitsio is a Greek based pasta dish, with meat that is cooked with aromatics like cinnamon and clove and put together like lasagna with a béchamel sauce. Check out the Athlete Food Version below:
Prepare ground beef with carrots, peas, chopped spinach or whatever veggies you have on hand. Load them up here so kids won’t find them :). Add cinnamon and oregano to ground beef while you are cooking it. Add a big spoon of tomato paste.
Prepare a traditional béchamel sauce.
Stuff the uncooked shells with the meat and pour béchamel sauce on top.
Cover with mozzarella cheese.
Cover and bake until cooked.
