Pantry Cooking: 5-minute Veggie Chili

The chili is super simple and takes 5 minutes to make. And, it’s SO. GOOD. It uses items you might already have in your pantry (i.e. cans and frozen items). This is a perfect meal for our current state of quarantine because it’s easy to make AND qualifies as comfort food. You can get as fancy as you want with the toppings - cilantro, jalapeΓ±os, a dollop of sour cream or pumpkin seeds. And, of course, lots of shredded cheese. Serve this over rice and you will have one filling, healthy and tasty meal. If you have a big family, go ahead and double the recipe.

Recipe:

1 28 oz. diced tomatoes in puree (the β€œin puree” part is important)

1 can of beans (Whole Foods brand sells a can that has 3 different kinds of beans in one can)

1 cup of frozen corn

2 tablespoons of our Athlete Food Ancho Chili Spice Mix or 1 packet of taco seasoning (just make sure you use taco seasoning that good quality and doesn’t have corn starch in it - trust us!)..

1 cinnamon stick 

Toppings: cilantro, grated cheese, lime juice, pumpkin seeds, jalepenos 

Add ingredients to a pot and bring to a boil. Turn heat down and simmer for 5 minutes. Remove cinnamon stick. Add toppings and eat right away or allow to cool and pack in meal prep containers. The flavor builds and is usually better the next day. Serve with rice.

*PS the Athlete Food Ancho Chili Spice Mix can be used in our Athlete Food nachos, bison and kale and many other recipes, so it’s a good thing to make and keep in your pantry.
