Watermelon Gazpacho

I recently got the opportunity to test out a new Ninja Food Processor. I have been using their blender for years so was very excited to give their food processor a whirl. I decided to see how it worked with one of my favorite mid-summer dishes: Watermelon Gazpacho. The beauty of this recipe is that you don’t have to do much prep and chopping. You just throw all the ingredients in the food processor and in the push of a button you have a delicious cold soup.  Of course, I went back and forth a few times with tasting spoons to adjust flavor, but this dish could not be simpler. Ingredients

  • 4-5 cups chopped up seedless watermelon

  • 1 Kirby cucumber

  • 2 medium sized red tomatoes

  • 1/2 of a large red pepper

  • Diced red onions, about 1/2 of a small onion

  • 1 inch ginger 

  • 2 handfuls of fresh basil

  • 3 tablespoons red wine vinegar

  • 3 tablespoons olive oil

  • Salt and Pepper to taste

  • Garnish with sliced cucumbers, jalapeΓ±os and cilantro

Instructions

    1. Put all the ingredients into the food processor and blend until you get a fairly smooth consistency.

    2. Chill for a few hours, garnish and serve.
