#meatlessmonday Grains & Greens bowl. Kale, roasted sweet potatoes & red onions, rice, lentils, Greek yogurt vinaigrette with tarragon, and our very own, homegrown hot pepper. Cold dinner for a hot night.
How to dessert. Today Amy wanted to bake so we made a strawberry upside down cake and piled on all the fresh berries, whipped cream, and mint. We used a cupcake recipe Amy found @delish, used half of the batter to make cupcakes and the rest for this.

Thrills and Chills: Mountaintop sips with CamelBak

As we all know, this year has been really different. Once I realized that there would be no 2020 triathlon season, I went right to work researching safe adventures close to home in New York. I love the thrill of discovering new trails for running, exploring historical cities, plunging into mountain lakes, and climbing steep mountains on my bike. Follow that up with a healthy snack and a little wine? Now we’re talking!

One of the places on my “staycation” bucket list was a place I passed hundreds of times on my bike while training, but never stopped to check out. What better time than now to stop and enjoy the view? So, instead of bikes, we packed a pizza picnic, drove up the mountain and sipped wine while taking in the beauty of the Catskill Mountains. 

Our wine was kept icy cold in the CamelBak Horizon Drinkware Wine Bottle. You all are probably familiar with CamelBak products for carrying water and fuel on adventures, but they also make a line of durable drinkware for the post adventure chill.  Their insulated stainless steel wine bottle I used holds an entire bottle of wine (see my video!). I was really impressed because a couple hours after I poured it, the wine was still cold. We poured it into the Horizon Drinkware 12 oz. wine Tumblers and enjoyed the sunset over the mountains.  If you don’t own wine tumblers, these are the best. Despite being a very warm evening, the wine was cold and it was just nice to drink out of.  Also, they are so easy to throw in a bag and you don’t have to worry about broken glass - there was a lot of bouncing up and down in the truck on the way up the mountain! 

Of course, while we were unwinding and relaxing, I couldn’t help but point out the mountains we would be conquering on the next bike ride adventure!  It’s all about chill...and the thrill!
